The Allure Vol au vents



I really enjoyed making this one, something appealing about a puffy, flaky cup that you can fill with almost anything.

  1. After working on your dough for hours, and hours, folding six times, preheat oven to 400 degrees. Using a 3-1/4-in. round cutter, cut out an even number of circles. Place them on a lined baking sheet.

  2.  Cut half of the circles out with a 2-1/2-in. cutter, cut centers out of the circles. Place the rings on top of the circles that are on the baking sheet. Make a wash by whisking egg with water; brush vol au vents. Chill for about 15 minutes. Bake until dark golden brown, 20-25 minutes.

  3. When cooled fill with a favorite filling, I’m a fan of the savory stuff. Eat, and most importantly, enjoy!
